Ingredients
  • 500g spaghetti
  • 300g minced beef
  • 2 garlic clovers
  • 1 onion
  • 1 carrot, cut into slices
  • 850g tomatoes
  • 50g tomato purée
  • 2 tbsp olive oil
  • mixed herbs (thyhme, bay leaf)
  • 1 tsp caster sugar
  • fresh parsley, chopped
  • fresh basil, chopped
  • Parmesan
  • salt, pepper

Preparation

  1. Mince the garlic and onions. Fry in the olive oil for 5 minutes in a large saucepan.
  2. Add the carrot.
  3. Turn up the head and add the mince. Brown, stirring well.
  4. Add the tomatoes, tomato purée and caster sugar Season with salt & pepper.
  5. Add three sprigs of thyme, three bay leaves and the chopped parsely.
  6. Bring to the boil, then lower the heat and simmer for 1 hour with the lid on.
  7. Cook the spaghetti in salted water.
  8. Add the sauce, either to the dish or on top of the spaghetti on the plate.
  9. Don't forget the finishing touch: chopped basil and grated Parmesan cheese to serve.

It is nevertheless refined and round on the palate, with a fruity bouquet of cherries and plums, and hints of wood and tobacco that linger on the finish as if by magic. These aromas are due to ageing in medium-toasted French oak barrels for five months. It is then bottled and aged in the bottle for four months. Finesse and balance are the order of the day, guaranteeing a sunny pairing that showcases Italian cuisine.
