Turbot With Truffle Recipe

Ingredients
  • 4 turbot steaks
  • 2 onions
  • 1 garlic clove
  • 1 truffle
  • 125g semi-salted butter
  • 3 tbsp single cream
  • Salt and pepper
  • 4 sprigs of chervil
  • thyme

Preparation

  1. Preheat the oven to 200 °C.
  2. Coat an oven dish with 25g butter and arrange the pieces of turbot.
  3. Season with salt and pepper.
  4. Cover with tinfoil with holes in it and bake for 10 minutes.
  5. Peel the onions and garlic. Fry them in a pan with olive oil. Sprinkle with a few sprigs of thyme.
  6. Add salt and pepper and cook for 10 minutes on a very low heat.
  7. Bring the cream to the boil in a small saucepan. Over a very low heat, whisk in the remaining very cold butter.
  8. Froth this sauce in a blender.
  9. Peel the truffle and cut it into fairly thin strips.
  10. Arrange the fish on a plate, season with salt and top with the foamy butter.
  11. Add the onions and garlic over the foamy butter.
  12. Sprinkle with strips of truffles and chervil.
  13. Serve immediately!
