The Domaine de Bila-Haut is located on a unique terroir, marked by the history of the Knights Templar. It produces great wines that are expressive and aromatic, reflecting all the richness of the Roussillon soil. Michel Chapoutier has chosen a unique location with geological characteristics that are of particular interest for the flavour profile of each wine: gneiss for the freshness and minerality of the wine, black and brown schist for a sunny touch, and a combination of clay and limestone for balance and power. Three main grape varieties are grown on the Domaine de Bila-Haut: the surprising Grenache , Carignan for crisp tannins and mineral wines, and of course Syrah , with its wild aromas of spices and garrigue. The story began in 2000 with ‘Bila-Haut’ and ‘Occultum Lapidem’, and continued in 2008 with L'esquerda, then ‘Collioure’.
