Nicole Deriaux has a weakness for Chardonnay, preferably typified, which represents nearly 70% of her vineyard. The vines, managed in a sustainable way, cover 9 hectares, including 7 in Chardonnay, 1.4 in Savagnin and the rest in Trousseau and Poulsard. For Nicole Dériaux, respect for wines goes through manual harvesting and then through natural and classic vinification in order to reveal the subtleties of the terroir and the grape varieties.
