Founded in 1937, the Saint Chinian cellar is a cooperative located in the heart of the village of the same name. It is run by men who are keen to pool their strengths and know-how, and is the main player in the social life of the region. 100 winegrowers belong to the cooperative, all of whom work daily with passion and tenacity to make their cellar one of the most renowned in France . This exceptional terroir, combined with the high standards of the men, enables the Cave des Vignerons de Saint-Chinian to produce around 25,000 hl each year, mainly in AOP (Appellation d'Origine Protégée, Saint-Chinian) and IGP (Indication Géographique Protégée, Pays d'Oc, Pays d'Hérault, Mont de la Grage). The average production per hectare is 38 hl, the grapes are harvested 50% by hand and 50% mechanically.
