Faust is a 100% Chardonnay grown biodynamically and harvested by hand, with fermentation from indigenous yeasts without sulphur, before ageing seven months in amphorae. A niche wine, highly sought after by enthusiasts. It has a red-orange colour and an expressive nose with flattering aromas of quince jam, chestnut honey, apricot, grapes and sour oranges created by a short maceration of the skins and juice (orange style wine). This wine is initially sharp, frank and tense on the palate while maintaining a beautiful charming roundness with fine but present tannins. A deep and delicate style with a fruity structure, chiselled and fluid. A lingering aftertaste. Faust is a wine designed to magnify the ageing in amphorae, it will charm orange wine lovers and the curious eager for new discoveries.

DOMAINE DE L'ÉCU

Guy Bossard, talented winemaker from Domaine de L'Ecu represents the face of Muscadet all by himself. A convinced biodynamicist, he applied his methods from the beginning of the 1970s. Mocked in the beginning and then admired a few years later, Guy Bossard is one of the rare winegrowers to have known how to elevate Muscadet to the rank of great wine. The convincing quality over the vintages led him to biodynamic reconversion in 1996. Building on his success and his experience, he decided to hand over to a wine enthusiast (Muscadet in particular). Boeotian winegrower, Frédéric Nigervan Herck, whom everyone calls Fred, learns alongside his mentor all the subtleties of these Loire lands. In no time at all, he has assimilated all the knowledge and intuition of his master, ensuring the sustainability of what can be considered the best of Muscadet wines. The wines today show a lot of panache and precision. The aromatic complexity and depth of the wines on the palate seem to have propelled Fred's wines to the top of the bill. This estate has clearly taken off, producing without a doubt some of the greatest wines in the world.
