Exceptional aromatics and finesse have earned this wine recognition and awards from the press... and rightly so!
It is on the limestone slopes of the Vaurigny hills, to the north of Pouilly, that "Les Caillottes" gives the fullest expression of its aromatic palette and complexity. The wine is fermented in stainless steel vats (13-18°C) and then aged for 6 months on its fine lees with stirring once a week for a period of three months. On tasting, it offers very fine aromas of white flesh fruits and citrus fruits with a seductive intensity (subtle and powerful). This Pouilly-Fumé is distinguished by its typicity and its high expression of Sauvignon Blanc. It is a delicious accompaniment to grilled fish, prawns and of course goat cheese. Also dare to try it with meat dishes such as lamb curry.
